In a wok heat oil, mustard seed.add curry leaves ginger, chilli and onion cook for 1 minute.Next add the vegetables, salt, chilli powder,turmeric and give it a good mix. - - Add the washed quinoa,mix together, add 2 and half cups of water to this and mix.Cover it. - Allow it to cook well for good 20 mins. - After 20 mins check if all the water has evaporated, and quinoa is well cooked has a nice texture to it.if not allow cook 5 more min.Serve hot!
