    2. Boil quinoa
    3. Cut up bell pepper
    4. Once quinoa is hearty, mix half large cut bell pepper and quinoa together
    5. Drain beans and add to quinoa
    6. Drain tomatoes and cut up and add to quinoa
    7. Add ground turkey
    8. In caserole dish, layer with blue corn tortilla chips
    9. On top of tortilla chips layer quinoa mixture
    10. Top with cheese and add another layer of blue corn tortilla chips
    11. Repeat layers as desired
    12. Preheat oven to 400°F
    13. Bake 20-30 mins
    14. Let stand

    Vegetables, black beans, quinoa, sauce and cheese. They loved it and I tested and tweaked it a couple more times and now have a new regular: quinoa black bean enchilada casserole! Mix quinoa, sauce and half of the cheese in the pan with the black bean / veggie mixture. Top with diced tomatoes and green onions. While the quinoa cooks, rinse the black beans and make the enchilada sauce.
