    Instructions to make Ivy gourd (kundru) stir fry:

    1. Wash and cut the ivygourd.
    2. Heat oil in a wok put cumin and green chilli when they splutter add the chopped ivygourd along with salt, turmeric, red chilli powder and coriander powder.
    3. Cook on medium flame.
    4. Once ivygourd is half cooked add chopped onion and cook until ivygourd and onions are soft.
    5. Finally add garam masala powder and switch off the flame.

    Called Dondakaya (Telugu) or Tindora/Tondli (Hindi) The dondakaya stir-fry has a nice crunchy texture with a mild spice-sweet nutty flavor due to the red chillis and peanuts and goes well with steamed white rice.
