    1. To make the dough in a mixing bowl add besan,wheat flour,salt, turmeric and kasuri methi. Mix the dry ingredients and add lukewarm water to it… form a dough and cover it with a wet cloth for 10 mins. Let it rest.
    2. Now, for the quinoa mix, to the boiled quinoa add black salt, white pepper, chopped capsicum and green chillies, paneer(mashed), boiled potato(diced), coriander leaves and to balance the spices add the lemon juice.
    3. Put the tawa/pan on medium heat. For the khakras now… make dough balls and roll them into thin sheets by dusting a lil bit of flour, poke them using a fork and cut them using a cookie cutter or as I did using a steel glass into small bite size circles.
    4. Now, put these small khakras on tawa and cook them slightly on both sides.. then use a flat surfaced utensil (a katori or a glass) press the khakras so that they dont swell up.. keep fliping them and they'll turn crispy. you can store these in an air tight containers.
    5. Now, mount these crispy mini khakras with the quinoa mix and enjoy!
