Take 1 cup quinoa
Make ready 2 tbsp rice flour

Prepare 3 tbsp grated fresh coconut
Get 2-3 spicy green chillies
Take 1 inch ginger paste

Instructions
Steps to make Quinoa-Cucumber Dosa:
Wash and soak quinoa in water for overnight.
Next day discard water. Peel and chopped cucumber, onion. In mixer jar first, add cucumber, then green chillies, ginger, onion, coriander leaves. Add soaked quinoa. Grind to smooth batter.(Add little water if needed to make dosa batter/ don't make thin watery).
Pour prepared batter in bowl add rice flour and salt. Mix well for 2 mins.
Heat dosa tawa. Grease with oil. Wipeout with tissue paper. Pour 2 ladleful of prepared quinoa- cucumber dosa batter on it. Spread it as shown. Sprinkle little oil on edges. Roast on medium flame. As the lower side turns crispy brown, flip over and cook another side for few minutes.
Serve/Relish Delicious Hot Quinoa- Cucumber Dosa with green coriander- coconut chutney and hot coffee.
